This sweet & spicy cornbread is glazed with one of our most popular sauces - Raspberry Chipotle. Made from scratch with a jalapeño kick - this is the perfect addition to your holiday table!
1 cup Yellow Cornmeal
1 cup All-Purpose Flour
1/4 cup Sugar (optional, adjust for sweetness)
1 tbsp Baking Powder
1/2 tsp Salt
1 cup Milk
1/4 cup Melted Butter or Neutral Oil
2 Large Eggs
1 Jalapeño - diced, reserve ¼ for slicing as garnish
¼ cup Blues Hog Raspberry Chipotle BBQ Sauce
Preheat oven to 400°F (200°C). Grease a pie pan or line with parchment.
Mix dry ingredients: cornmeal, flour, sugar, baking powder, salt in a large bowl.
Mix wet ingredients: in another bowl, whisk milk, melted butter, and eggs.
Combine wet and dry ingredients until just mixed - don’t overmix. Fold in diced jalapeños.
Pour batter into prepared pan and smooth the top.
Bake 20-25 minutes, or until golden and a toothpick comes out clean.
Glaze the cornbread: Brush Raspberry Chipotle over the cornbread immediately after baking.
Serve warm and enjoy a sweet-spicy kick with every bite!
