Whiskey Blues Glazed Carrots

Looking for a fresh take on a Thanksgiving classic? Look no further - topped with butter toasted pecans and herbed goat cheese - these Whiskey Blues glazed carrots will become an instant fan favorite!

Ingredients

2 lbs Heirloom Carrots (or regular carrots)

1 tbsp Olive Oil

1 tbsp Bold & Beefy Seasoning

2 tbsp Unsalted Butter

½ cup Blues Hog Whiskey Blues BBQ Sauce

1 tbsp Apple Cider Vinegar

½ cup Pecans, roughly chopped

4 oz Herb Goat Cheese
-
2 tbsp Parsley (optional)
Directions
Preheat oven to 400ºF.
Add carrots to a baking dish and drizzle with olive oil, then season with Bold & Beefy Seasoning.
Roast for 20-25 minutes, flipping halfway, until slightly carmelized.
In a saucepan over medium heat, melt 1 tbsp butter.
Add pecans and lightly toast until fragrant. Remove from pan and set aside.
In the same saucepan, melt remaining 1 tbsp of butter and add Whiskey Blues BBQ Sauce and apple cider vinegar.
Let simmer for 5-7 minutes, until glossy and slightly thickened. Stir frequently.
Remove carrots from oven and add Whiskey Blues glaze to the baking dish. Toss carrots and return to oven for another 3-5 minutes.
Remove carrots and add pecans, herb goat cheese, and optional parsley. Enjoy!
