Ingredients

4 lbs. Boneless Chicken Thighs or Chicken Breast Filets

4 cups Water
-
1 cup Rise & Brine Chicken Marinade

4 Eggs beaten
-
3 cups All-Purpose Flour
-
¼ cup Blues Hog Cajun Bayou Seasoning

1 Tennessee Red Squeeze (or WILD)

8 Potato Buns

Peanut Oil (for fryer)

Pickled Onions

Directions
Mix ½ cup Rise & Brine to 2 cups room temperature water and shake. Inject chicken halves from the backside (about 1 syringe per piece).
Whisk together the flour and Cajun Bayou Seasoning. Dip the chicken in flour mixture, beaten eggs, then coat again with flour mixture.
Set fryer to 350. Place chickens in oil and cook for 15-20 minutes or until internal temperature is 165. The final result should be a beautifully golden chicken with crispy breading.
Toss done chicken in Tennessee Red (or Wild). Open bun and layer coleslaw, followed by chicken, pickles, pickled onion, and drizzle with coleslaw dressing — If using Wild, drizzle in ranch.
