Coat each chop in olive oil and season generously with Truffle & Chop seasoning. Place on smoker at 300℉ for about 30 minutes or until internal temperature is around 133℉.
Cut down to 1 bone pieces. Follow bread crumb recipe attached and then fully coat each piece. Increase temperature on smoker and quickly sear until bread crumbs are dark brown and crusted. Remove from heat, serve, and enjoy!
