Ham, Egg & Cheese Breakfast Turnovers

Ingredients

¼ Cup chopped Ham (We choose Marble Ridge Farms!)

4 eggs, divided

1 tbsp. sour cream

¼ tsp. Salt
-
½ tsp. Blues Hog All In Seasoning
-
½ cup grated cheddar (or your favorite) cheese

13 oz. Puff pastry, cold

Chopped scallions, if desired
Directions
Preheat the oven to 425℉.
In a medium skillet, cook ham over medium heat until it is fragrant and lightly browned.
Whisk together 3 eggs plus 1 egg white and sour cream. Reserve the extra yolk for later.
Pour eggs into a skillet with ham and season with Blues Hog All In Seasoning. Cook until just barely set and remove from heat.
Cut cold puff pastry into 6 squares and place on a parchment lined baking sheet. Top with 1/6 of the egg and ham mixture and a couple tsp. of cheese.
Fold the corners of the puff pastry over the egg mixture and pinch them together to seal.
Mix the egg yolk with a tablespoon of water and brush over the pastry. Sprinkle with additional cheese.
Bake for 18-22 minutes or until golden and flaky. Serve immediately!
