This sandwich is proof that Ritas & Fajitas belongs on more than just fajitas! Featuring our Bold & Beefy Smoked Sausage - this sandwich is the perfect crispy & herby bite!
1 package Blues Hog Bold & Beefy Sausages
1 loaf french bread (or any bread of your choice!)
1 ripe avocado
¼ cup red onion
¼ cup parsley
½ cup cilantro
¼ cup olive oil
1 tbsp ‘Ritas & Fajitas
2 tbsp red wine vinegar
1 clove garlic
Prep sausages by slicing down the middle - to the edge but not through the sausage.
Optional: toast bread in a warm oven for 2-3 minutes.
Heat a small amount of olive oil in a pan over medium heat. Place sausages flat side down in pan.
Prep chimichurri. Add red onion, parsely, cilantro, olive oil, ‘Ritas & Fajitas, red wine vinegar, and garlic to a food processor and pulse until well incorporated.
Remove sausages from heat once crispy and golden.
Mash an avocado and smear onto bottom of french bread. This will be the first layer of our sandwich. Top with a sprinkle of ‘Ritas & Fajitas if desired.
Assemble sandwich. Add crispy sausage on top of avocado spread, top with chimichurri, and finish off with the other ½ of the french bread loaf.
Slice into 4 large sandwiches or 8 smaller sandwiches and enjoy!
We used a french bread baguette for this sandwich but it would be great on sourdough, brioche, or even wheat!
