Ingredients

1 lb ground chicken

1 tbsp olive oil
-
Β½ medium yellow onion, diced

Β½ green bell pepper, finely diced

2 cloves garlic, minced

1 tbsp Cajun Bayou Seasoning (adjust to taste)

Β½ cup Tennessee Red
-
2 tbsp tomato paste
-
ΒΌ cup water
-
Brioche buns
-
Sliced provolone (if desired)

Coleslaw (if desired)
Directions
Heat olive oil in a skillet over medium heat. Add onion and bell pepper and cook 3β4 minutes until softened. Add garlic and cook 30 seconds.
Add ground chicken to the skillet. Break it up and cook until no longer pink, about 5β6 minutes.
Sprinkle Cajun Bayou Seasoning over the chicken mixture and stir to coat evenly.
Stir in tomato paste, Tennessee Red Sauce, and water. Mix well.
Reduce heat to low and simmer 8β10 minutes, stirring occasionally, until thick, saucy, and sloppy (but not soupy).
Spoon hot Cajun chicken mixture onto toasted buns. Add toppings if desired and serve immediately.
