Bill Purvis with Chicken Fried BBQ

30 minutes
1 hour
3 lbs. Chicken Wings
Blues Hog Sweet & Savory Seasoning
1/2 stick Butter
1/4 cup Blues Hog Tennessee Red BBQ Sauce
1/2 cup Blues Hog Champions Blend BBQ Sauce
Prepare grill for cooking using a vortex accessory, using one grill grate down the middle.
Remove chicken wings from packaging. Prepare by cutting the wing tips off and separating drums and flats.
Season all sides with Sweet & Savory Seasoning.
Place the 4-5 wings on the grill grate directly over the vortex for 1 min each. This should be just enough to get jail bird grill marks.
After the lines are set move to the indirect sides of the grill, towards the outside of the cooking grate. Continue the same with 4-5 more wings until all wings have grill marks and have been moved to the indirect heat.
Grill wings for 30-40 minutes, turning occasionally for even cooking. Wings are done when the internal temperature reaches a minimum of 165ºF.
In a small saucepan over medium heat, melt 1/2 stick of butter. Add both BBQ sauces and heat to a simmer while the wings cook.
Remove from heat and use a large bowl to toss the grilled wings the sauce mixture.
Place all wings back on the grill to set the sauce. This should take approximately 10 minutes or until the sauce gets tacky.
