Ingredients

2 lbs. Ground Pork (We choose Marble Ridge Farms!)

2 lbs. Ground Beef (We choose Marble Ridge Farms!)

Blues Hog Sizzle Bacon

Blues Hog All In Seasoning

Blues Hog Original Dry Rub

Blues Hog Smokey Mountain

Blues Hog Raspberry Chipotle

1 stick Butter
-
Butter lettuce
-
Fried Onion Sticks
-
Fried Jalapeños
-
Brioche Buns
-
1 pkg. Shredded Cheddar Cheese
Directions
For Bacon:
Remove bacon from package, and season a baking sheet with Rodeo Rub and Original Dry Rub (to taste). Lay strips across pan and season the top. Place on the smoker or grill at 250℉.
When bacon is fully cooked, sauce with Raspberry Chipotle and let caramelize. Remove when done and set aside!
For Burger:
Mix your ground pork and beef in the same bowl until well combined. Add Rodeo Rub(to taste), Original Dry Rub (to taste) and Smokey Mountain (to taste) and mix.
Form patties (around ½ lb. in size). Season with more Rodeo Rub and Original Dry Rub (to taste). Light smoker or grill to 250℉. Place patties on and let slow cook for 40-45 minutes or until internal temperature is around 140℉.
Remove from heat, sauce with Smokey Mountain, and place back on your smoker or grill until desired doneness. Toast your buns.
Heat a cast iron with butter and place burger patty in the center. Cover with shredded cheddar cheese until crispy golden brown, scrape all cheese out with burger and set aside.
Build your burger! Start with your bottom bun, adding your favorite BBQ sauce, the patty, Raspberry Chipotle Bacon, fried jalapeños, fried onions, and top it all off with your favorite BBQ sauce!
