Spatchcock BBQ Chicken
Turn chicken breast-side down. Use sharp kitchen scissors to cut out the backbone.
- Turn chicken over and open back, so the legs are facing inward.
Place palms over the center of the breastbone and firmly press down to crack, forcing the chicken to lay flat
Coat the chicken generously with both Blues Hog Bold and Beefy Seasoning and Sweet and Savory Seasoning.
Place on the grill and cook until the chicken reaches an internal temperature of 165º. This should take about 45 minutes, if not longer.
Remove and glaze with your favorite Blues Hog Champions' Blend BBQ Sauce.
Return to the grill until the chicken reaches an internal temperature of 170º and the glaze or sauce is tacky.
- Remove and let rest until you are ready to serve.
